Vanilla Buttercream Filling

One of the most beloved and easy-to-make fillings for macarons is vanilla buttercream. With its smooth texture and light sweetness, it pairs beautifully with almost any macaron shell flavor.

Ingredients

  • 1/2 cup unsalted butter (softened)
  • 1 1/2 cups powdered sugar
  • 1 teaspoon pure vanilla extract
  • 1 tablespoon heavy cream or milk
  • A pinch of salt

Instructions

  1. Cream the butter: Using a stand mixer or hand mixer, beat the softened butter until light and fluffy, about 2-3 minutes.
  2. Add powdered sugar: Gradually add the powdered sugar, beating until fully combined. The mixture should become thick.
  3. Add vanilla and cream: Mix in the vanilla extract and cream until the buttercream is smooth and easy to spread. If the consistency is too thick, add more cream; if it’s too runny, add more powdered sugar.
  4. Beat again: Continue mixing for another minute to make the buttercream light and airy.
  5. Fill the macarons: Transfer the buttercream into a piping bag and fill the macaron shells, gently pressing them together.
